Preparing the perfect African porridge is not a daunting task, but it does require attention to detail and the right ingredients. With the right techniques and ingredients, you can achieve a creamy texture without adding cream.

One of the key ingredients in cooking the perfect African porridge is millet flour. You can use any type of porridge flour available in the supermarkets, but millet flour is ideal for African porridge. It has a unique taste and cooks into a smooth, creamy porridge.

When cooking your porridge, it's essential to observe the ratios of flour to water. For the perfect consistency, you need to get this right. Two spoonfuls of porridge flour are enough for two cups of porridge, and one full cup of flour would make ten cups of porridge.

Another crucial aspect of cooking the perfect African porridge is the use of milk. If you cook your porridge with milk or a combination of milk and water, you might want to avoid using lemon juice. The milk and lemon juice mixture gives the porridge an awkward consistency.

Here's a simple recipe to cook the perfect African porridge:

  1. Combine 100g of millet flour with 250ml of cold water in a small bowl. Mix until it combines into a smooth texture.
  2. Bring 1000ml of water to a boil in a saucepan.
  3. Simultaneously, stir the boiling water and slowly add the flour-mixture from step one. You can use your right hand to stir the boiling water while slowly adding the mixture with your left hand.
  4. Continuously stir for about one minute until you obtain a creamy consistency.
  5. Allow the porridge to simmer for about five minutes on low heat. If you prefer, you can add the milk.
  6. Add the lemon juice and sugar and simmer for another minute.
  7. Pour the porridge into a mug or a bowl and allow it to rest for a few minutes before eating.

Once you've cooked the perfect African porridge, you can get creative with toppings. Unlike oat porridge, traditional millet porridge is normally left without additives, but you can always tweak it a little by throwing in some toppings. Here are some options of toppings you can consider:

  • Crushed nuts and organic marmalade
  • Chia seeds and natural yoghurt
  • Grated apple, walnuts and sliced red grapes
  • Blueberries, honey, toasted nuts and yoghurt
  • Peanut butter, cocoa and fresh raspberries
  • Banana, almond and cinnamon
  • Grated apple and blackberries
