The Art of Making Soft Layered Chapatis

With a few simple steps, you can create delicious soft layered chapatis that will impress your family and friends. The key to making soft chapatis lies in the making process, and we will guide you through it.

First, mix together 3 cups of all-purpose flour, 1 tablespoon of sugar, and 1 teaspoon of salt in a big bowl. Add margarine (optional) and mix with your hands until the dough comes together.

Next, make a well in the center of the dough and pour in water in bits as you knead. Continue kneading for about 5 minutes, until the dough is smooth and elastic. If the dough is sticky, add a little more flour until you get the perfect texture.

Place the dough on a work surface and continue to knead for another 3 minutes, until the dough is firm but soft and not sticky. Cover it with a damp cloth, cling film, or polythene for about 20 to 30 minutes.

After the dough has rested, knead it again and cut it into small balls. Use a rolling pin to roll out each ball into a circular shape, brush with oil, and fold into a knot. Repeat this process until all the dough balls are rolled out.

Heat a pan (tava) over medium heat and cook the chapatis for 1-2 minutes on each side, until they are golden brown and puffed up. Brush with oil occasionally to keep them soft.

  • Use good quality wheat flour.
  • Use lukewarm water to make the dough.
  • Rest the dough for 20 minutes before cooking.
  • Always cover your dough balls until you are ready to roll them.
  • When rolling, make the edges thinner than the center to help the chapatti puff up.
  • Heat your pan well before placing the rolled chapatti on it.
  • Maintain the heat to cook the chapatis evenly.
  • Use a spatula to lightly press the chapatti on the tava at the points where steam is escaping.
