Ingredients ¶
- 1 cup all-purpose flour: You can use either all-purpose flour or whole wheat flour. If you like, you can combine the two.
- 2 tablespoons of brown sugar: Brown sugar is the best choice as it will make your pancakes a little moister.
- 1 teaspoon baking powder: This is what makes your pancakes light and fluffy.
- ½ teaspoon salt: Salt balances the sugar and brings out the flavors in the pancakes.
- ¾ cup of milk: You can use whole milk, reduced-fat milk, or even skim milk. You can also substitute dairy milk with plant-based milk such as almond or coconut milk.
- 2 tablespoons of melted butter
- 1 egg: The eggs add structure and help make the pancakes light and fluffy.
- Vanilla Extract (or any other flavor you like): Vanilla adds sweetness and depth of flavor to your pancakes.

Directions ¶
- Whisk the flour and baking powder (dry ingredients) in a large bowl.
- Melt butter and warm milk.
- In a separate bowl, whisk the butter, milk, and eggs (wet ingredients) together.
- Mix the wet and the dry ingredients and stir until just combined.
- Heat your nonstick pan on low heat. Coat with cooking spray and pour about ¼ cup-full of batter onto the pan.
- Cook until bubbles appear on the surface.
- Use a spatula and flip and cook the other side until browned.
Additional Tips ¶
For the best results, cook over medium heat. Use a non-stick pan and spray it with cooking spray before heating it up. Before making the first batch, gently wipe the pan to remove any big blobs of oil. This will give you perfect browned pancakes.
Remember to mix the dry and wet ingredients separately and only combine them just before cooking. Overmixing the batter will make the pancakes heavy and flat.
When flipping the pancake, wait until you see bubbles form in the centre of the pancake. Flip it only once and cook the other side until browned.
