Kimchii, a staple in Korean cuisine, has been a part of traditional meals for centuries. Its health benefits are numerous, and it is often recommended as a way to boost the immune system, improve digestion, and support brain and mental health.

One of the key reasons kimchii is beneficial for gut health is its high probiotic content. Probiotics are live bacteria and yeasts that are beneficial for the digestive system, and kimchii contains a significant amount of these beneficial microorganisms.

However, like all good things, kimchii also has some downsides. It contains high levels of sodium, which can be detrimental to overall health if consumed in excess. Additionally, kimchii is made with hot chilli peppers, which may not be suitable for those who cannot tolerate spicy food.

Despite these potential drawbacks, kimchii remains a popular ingredient in many cuisines. Its unique flavor and numerous health benefits make it a great addition to any meal.

Simple recipe: To make kimchii, start by preparing a large bowl of cabbage, cut lengthwise, and sprinkle with salt and sugar. Cover the cabbage with water and weigh it down with a plate or dish to keep it submerged. Refrigerate overnight, then prepare the paste by blending ginger, garlic, chilli flakes, fish sauce, and sugar. Add carrots and onions to the paste and blend until smooth. Rub the paste over the cabbage, place it in a glass jar, and cover tightly. Let it sit at room temperature for 24 hours to two weeks, then refrigerate.
