When it comes to baking, baking powder is a staple ingredient that can make or break a recipe. However, many people are unaware of the best way to use it. According to experts, baking powder is most effective when combined with flour first, then mixed with wet ingredients.

There are two main types of baking powder: single-acting and double-acting. Single-acting baking powders produce gas when mixed with water, while double-acting baking powders, commonly used in commercial baking, produce small amounts of gas when mixed with liquid.

However, the real magic happens when the batter is heated during cooking, causing the gas to be released. This is why high altitude can affect the amount of baking powder needed in a recipe, as the lower air pressure can cause the gas to be released more quickly.

But what happens when baking powder loses its potency over time? In this case, expiry dates on baking powder should be taken with a pinch of salt. To verify the potency of your baking powder, try the simple test of pouring 1/3 a cup of hot water over a teaspoon of baking powder in a cup. If the mixture bubbles enthusiastically, your baking powder is good to go. If not, it's time to replace it.
