December 25, 2019, marked a special day for many Kenyans, as it was the day they could indulge in their favorite dish, Pilau. This popular coastal dish is a staple in many Kenyan homes and is often served with Kachumbari.
While Pilau can be cooked with various meats, including beef, chicken, mutton, or even soya, the key to cooking it to perfection lies in the preparation and cooking time. In this article, we will provide a simple recipe for preparing Pilau to serve 3-4 people.
Preparation time is just 10 minutes, but the cooking time is a bit longer, at 36 minutes. However, the end result is well worth the wait, as the Pilau is cooked to perfection and is sure to satisfy your taste buds.
Here is the list of ingredients needed for the recipe:
- 1 cup of rice (500g)
- 2 large onions
- 1 clove of crushed garlic
- 1 crushed ginger
- 20g of pilau masala
- ¼ cup of vegetable oil
- ½ kg of cubed beef
- 1¾ cups of cold water
- Salt to taste
Now, let's move on to the directions:
First, heat the vegetable oil in a cooking pot and fry the onions until they are cooked but not burnt. This will give the Pilau its characteristic color. Next, add the garlic, ginger, salt, pilau masala, and allow them to cook for 2-3 minutes. Then, add the meat and let it cook until it is cooked through.
Once the meat is cooked, add the rice, stir to combine the meat with the rice, and add the 1 ¾ cups of water. Bring the mixture to a boil over high heat with the cooking pot uncovered. Once the water level has gone down, lower the heat, cover with foil paper or brown kitchen paper, and cook for a further 2-3 minutes or until the water has dried up.
Turn off the heat, fluff the rice, and set it aside for about 5 minutes. Finally, serve the Pilau with Kachumbari and enjoy!
