  • 4 pieces of chicken thighs
  • 2 whole butternuts, one halved and one cubed
  • Juice of 1 lemon
  • 4 garlic cloves
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon curry powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic ginger paste
  • 1 teaspoon hot sauce
  • 1 tablespoon oil

First, scoop out the seeds from the butternut using a spoon to ensure they're removed and set aside. Sprinkle salt on the chicken thighs and add the paprika, curry powder, and cayenne pepper. Mix well using your hands until the marinade is evenly distributed. Add some hot sauce and let it marinate for 10 to 15 minutes.

Preheat your oven to 250°C and place the halved butternuts on a flat baking tray. Add the chicken pieces and cubed butternut on top. Sprinkle some oil and salt over the butternut and bake for about an hour or until it's soft and caramelized. Serve the whole roasted butternut as a meal on its own.
