Published on October 19, 2019, this recipe for cheesy beef githeri is a delicious twist on the traditional Kenyan dish.

Ingredients include 250g dry beans soaked and boiled, 250g fresh maize/sweet corn, 500g beef steak cubed, 1 onion sliced, 1 teaspoon garlic ginger paste, 1 tablespoon oil, 1 teaspoon curry powder, 2 beef bouillon cubes, 100g cheddar cheese grated, 100g mozzarella cheese grated, 3 tablespoon white vinegar, 70g tomato paste, and 1 cup water.

Instructions begin by sprinkling vinegar on the beef and mixing well to tenderize it. Salt is added and mixed well before setting it aside for 30 minutes.

Next, a pan is heated over medium heat, and the oil is added before sautéing the beef to seal its pores. Once browned, turmeric powder is added and mixed well.

Garlic ginger paste and beef bouillon cube are then added, and the mixture is stirred until the liquid evaporates. Sliced onions are added, followed by boiled beans and corn, and the mixture is stirred until well combined.

Tomato paste is added, mixed well, and then one cup of water is stirred in before covering the pan with a tight lid. The mixture is brought to a boil until the beef, beans, and maize are tender.

Finally, cheddar and mozzarella cheese are sprinkled on top, and the pan is covered for another two minutes to allow the cheese to melt. The cheesy beef githeri is then served hot, garnished with a few curry leaves.
