Easy Recipe: Lasagna Made the Simple Way ¶

Traditional lasagna recipes often require lasagna noodles, which may not be readily available in every kitchen. However, by substituting spaghetti for lasagna noodles, you can still enjoy a delicious and satisfying meal.
To make this simplified lasagna recipe, you will need the following ingredients:
- 250g spaghetti, boiled
- 4 chicken thighs or breasts, pan-seared
- 250ml thick white sauce
- 250ml tomato concasse
- 200g cheddar cheese, grated
- 150g mozzarella cheese, grated
- 2 tomatoes, sliced
- 1 sweet pepper, sliced
- Salt and pepper to taste
- 1 glass baking tray
For the white sauce, you will need:
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup milk
For the tomato concasse, you will need:
- 4 tomatoes, cut into wedges
- 100g tomato paste
- 1 teaspoon garlic ginger paste
- 1 onion, roughly cut
- Juice of 1 lime
- 1 teaspoon black pepper
- 1 teaspoon turmeric powder
- Handful of coriander leaves
- Salt to taste
Instructions for making the white sauce include melting butter over medium heat, stirring in flour, salt, and pepper until smooth, and gradually whisking in milk. Bring the mixture to a boil, stirring for 2 minutes or until thickened.
Instructions for making the tomato concasse include blending tomatoes, black pepper, and coriander until smooth, frying onions until golden brown, adding garlic ginger paste and turmeric, and cooking for 5 minutes before adding tomato paste and lime juice.
Assembly of the lasagna involves spreading white sauce and tomato concasse on the baking tray, adding chicken, cheese, and cooked spaghetti, and repeating the layers. Finally, arrange sweet pepper slices and tomato slices on top and bake in the oven at 220°C for 30-35 minutes or until the top is nicely crusted.
