For this mouth-watering stew, you will need:
- 1/2 kg beef, cubed
- 1/4 kg potatoes, cubed
- 2 medium-size carrots, diced
- 1 onion, sliced
- 2 to 3 tomatoes, chopped
- 2 tablespoons tomato paste
- 1 tablespoon chopped fresh coriander
- 1 tablespoon mchuzi mix
- 1/4 teaspoonful cinnamon
- 2 tablespoons cooking oil
- 1/4 cup tamarind sauce
- Salt and pepper (optional)
Here's how to prepare this delicious stew:
Start by boiling the beef in a litre of water until tender. Add the potatoes and carrots to the boiling water.
In a separate pan, heat the oil and sauté the onions until they turn golden brown.
Add the cinnamon and mix well, then add the tomatoes and cook until they're tender.
Dilute the mchuzi mix in half a cup of water and mix well. Add the tomato paste and stir until well combined.
Now, add the boiled beef with its broth, potatoes, and carrots to the cooked paste. Mix well and add the tamarind sauce, salt, and pepper (if using).
Cook the stew on low heat until it thickens, then garnish with chopped coriander. Serve with ugali and kachumbari for a truly authentic Kenyan experience.
