Emile Smith-Rowe scored the winning goal in the 56th minute, drilling in a low shot from 18 meters after a pass from teammate Ben White.
The result lifted Arsenal to fifth place in the Premier League table, just one point behind fourth-placed West Ham on goal difference.
Watford goalkeeper Ben Foster made several crucial saves throughout the game, including a superb reflex save to deny Gabriel a close-range header.
However, Foster was powerless to stop Smith-Rowe's goal, which sealed the win for Arsenal and sent them climbing up the Premier League table.
