Happy new month! As we start fresh, why not try a new recipe to match the excitement? Today, we're sharing a simple yet flavorful potato and chicken dish that's sure to become a favorite.

To make this mouth-watering dish, you'll need:

  • 1 chicken, cut into quarters (don't remove the skin)
  • 1kg potatoes, peeled and halved (parboiled)
  • 4 carrots, sliced
  • 2 onions, cut into chunks
  • 2 bell peppers, cubed
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon oregano
  • Salt to taste
  • Juice of one lemon
  • 1 tablespoon olive oil

First, mix the spices and salt together in a bowl. Pat the chicken dry and rub half of the spice blend all over it. Squeeze the lemon juice on the chicken and set it aside.

Next, place the potatoes, carrots, onions, and bell peppers in a casserole dish. Sprinkle the remaining spice blend over the vegetables and mix well. Place the marinated chicken on top of the potatoes and vegetables.

Finally, drizzle olive oil over the chicken and potatoes, and roast in the oven at 200°C for about one hour and 15 minutes, or until the potatoes are crispy and golden brown and the chicken is cooked through.
