Delicious Goat Rice Pilaf

Published on October 3, 2021, this recipe for goat rice pilaf has been a favorite among many home cooks. It's a simple yet flavorful dish that's perfect for a weeknight dinner or a special occasion.

Ingredients:

  • 1 1/2 kg goat meat, cut into chunks
  • 1 tablespoon ginger, minced
  • Half cup vinegar
  • 2 tablespoons oil
  • 3 onions, sliced
  • 1 capsicum, sliced
  • 1 tablespoon pilau mix
  • 2 cloves of garlic
  • Half kg potatoes, halved
  • 4 cups water
  • 2 cups basmati rice
  • Salt to taste

Instructions:

Start by boiling the goat meat in a pot over medium heat. Add the ginger mince and vinegar, and cook until the meat is soft. Set it aside once cooked.

In a separate pan, heat the oil and sauté the onions and capsicum until golden brown.

Next, pound the pilau mix and garlic in a mortar and pestle, and add it to the onion mixture. Mix well, then add in the potatoes to allow them to absorb the flavors of the onions.

Once the potatoes are coated with onions, add them to the meat mixture, keeping them separate from the onions and capsicum.

Now, add the rice to the meat mixture, stir, and pour in the water. Season with salt and bring to a boil.

Once the liquid is almost evaporated, add the fried onions and capsicum mixture on top of the rice.

Cover the pot with a tight lid and set the heat to low. Let it steam for about 15 minutes or until the rice is fluffy. Serve with kachumbari and ripe bananas for a delicious and satisfying meal.
