These delicious chicken wings are incredibly easy to make and can be served with brown rice and a side salad for a well-rounded meal.

Alternatively, you can skip the rice and enjoy the dish with your favorite yoghurt blend and herbs.

Ingredients:

  • 1kg chicken wings (drumette and wingette)
  • 1 tablespoon garlic ginger paste
  • Juice of 1 lime
  • 1 teaspoon Cayenne pepper
  • 1 stick rosemary
  • 1 teaspoon oil
  • 1/4 cup tamarind extract
  • 1 onion sliced
  • 1/2kg Okra (lady fingers)
  • Salt to taste

Instructions:

Begin by separating the chicken wings into drumettes and wingettes using a knife.

Next, marinate the wings in a mixture of garlic ginger paste, lime juice, Cayenne pepper, rosemary, tamarind, and salt for at least one hour.

Preheat your oven to 200 degrees Celsius and lay the wings flat on a baking tray.

Roast the wings in the oven for about 45 minutes or until golden brown and cooked through.

Once browned, reduce the heat to 150 degrees Celsius and add the okra and onions to the baking tray.

Cook for an additional 15 minutes, then serve the chicken wings with brown rice and a side salad, or enjoy with your favorite yoghurt blend and herbs.
