Brunch just got a whole lot tastier with our mouth-watering blueberry pancakes recipe. Serve them warm with a drizzle of maple syrup or your favorite toppings for a delightful treat.

Ingredients ¶
- 1 cup all-purpose flour (spooned and levelled)
- 2 tablespoons sugar
- 2 teaspoons baking powder
- Half teaspoon salt
- 1 cup milk
- 2 tablespoons unsalted butter, melted, or vegetable oil
- 1 large egg
- 1 tablespoon vegetable oil
- 1 packet of fresh blueberries
- Assorted toppings, such as butter, maple syrup, confectioners’ sugar, honey, jams, sweetened whipped cream or chocolate syrup
Instructions ¶
Start by whisking together the flour, sugar, baking powder, and salt in a small bowl. Set aside and mix the milk, melted butter or oil, and egg in a separate bowl.
Next, add the dry ingredients to the milk mixture and whisk until just moistened. Be careful not to overmix, as a few small lumps are perfectly fine.
Heat a large skillet or griddle over medium heat and rub it with a paper towel that's been moistened with oil. For each pancake, spoon two to three tablespoons of butter onto the skillet and add a few blueberries on top.
Cook until the surface of each pancake has bubbles and a few have burst, then flip carefully with a thin spatula and cook until browned on the underside. Transfer the pancakes to a baking sheet or platter and cover loosely with aluminum foil to keep warm in the oven.
