Published on July 11, 2021, this recipe for oven grilled fish with roasted veggies is a delicious and healthy treat.
For this recipe, you will need a 1kg whole fish, preferably white snapper, along with various spices and vegetables.
Preheat your oven to grill function and lay the fish on a baking wire rack. Place okra and eggplants beside the fish and roast for about 15 minutes on each side.
While the fish is roasting, prepare the coconut sauce by sautéing garlic ginger mince, chopped onions, and turmeric in a pan over medium heat. Add coconut cream and bring to a boil, then sprinkle salt and coriander, and pour in lime juice. Cook until thick.
Once the fish is ready, remove it from the oven and baste the coconut sauce over the fish. Serve with the roasted veggies.
