How to Make Githeri with Mahindi and Mbaazi ¶

Githeri, a traditional Kenyan dish made with boiled beans and corn, is a staple in many households. In this article, we will show you how to make a delicious version of githeri with mahindi and mbaazi in just 1 hour and 30 minutes.
Ingredients:
- 4 cups of boiled mahindi
- 1/4 cup of mbaazi
- 2 medium-sized nyanya
- 1 fungu of dania
- 1 piece of kitunguu
- 1 small piece of pilipili mboga
- 2 pieces of kitunguu saumu
- 1 small piece of pilipili ya kawaida (optional)
- 2 large pieces of mafuta
Instructions:
Start by boiling the mahindi and mbaazi until they are tender. Drain the water and set aside.
In a clean pot, heat the mafuta and sauté the kitunguu until it is golden brown. Add the nyanya, pilipili mboga, and chumvi, and stir well. Cook for 3 minutes until the mixture thickens.
Now add the boiled mahindi and mbaazi to the pot and stir well. Cook for 2 minutes until the githeri is heated through. Finally, add the dania and stir well. Serve hot and enjoy!
Optional: You can also serve the githeri with parachichi or kaangwa for a delicious twist.
