  • 2 tablespoons of vegetable oil
  • 5 cloves of garlic, minced

  • 2 carrots, chopped
  • 1 teaspoon of curry powder
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 4 cups of vegetable broth
  • 1 cup of coconut milk
  • 1 tablespoon of honey
  • 1 tablespoon of freshly squeezed lime juice

Instructions:

  1. Heat the oil in a large pot over medium heat. Add the garlic, onion, and bell peppers, and sauté until the vegetables are tender.
  2. Add the nyanya, carrots, curry powder, salt, and pepper. Stir well to combine.
  3. Pour in the vegetable broth and bring the mixture to a boil.
  4. Reduce the heat to low and simmer for 15 minutes, or until the soup has thickened slightly.
  5. Stir in the coconut milk, honey, and lime juice. Simmer for an additional 5 minutes, or until the soup has reached the desired consistency.
