Easy Mango Pilipili Chutney Recipe

Chutneys are a versatile condiment that can elevate the flavor of any meal. This easy-to-make mango pilipili chutney is a perfect example of how a few simple ingredients can come together to create a delicious and tangy accompaniment.

The recipe uses a combination of mangoes, green chillies, tomatoes, and spices to create a flavorful and slightly spicy chutney. The addition of tamarind extract and lemon juice gives the chutney a tangy and slightly sweet taste.

Here's what you'll need:

  • 1 onion, diced
  • 5 hot green chillies, chopped
  • 2 ripe tomatoes, diced
  • 50g tomato paste
  • 1 teaspoon garlic, ginger mince
  • 1 tablespoon cayenne pepper
  • 4 tablespoons lemon juice
  • 3 tablespoons oil
  • 1 teaspoon sugar
  • Salt to taste
  • 4 green/unripe mangoes, sliced
  • 2 carrots, cut into strips
  • 1/2 cup thick tamarind sauce/extract

Instructions:

  1. Pour the oil into a sauce pan over medium heat.
  2. Saute the garlic and onions until golden brown.
  3. Add the tomato, mango, carrots, and hot green chilli. Stir until slightly mashed.
  4. Add the tomato paste and cayenne pepper. Mix well.
  5. Add the tamarind extract and lemon juice, then finish off with 1 teaspoon of sugar and salt to taste.
  6. Let it cook until thick and you can see the oils bubbling up on the sides of the pan.
  7. Preserve in a tight container and store in the refrigerator for up to one month.
